How to spot quality matcha
Ceremonial is not the whole story. Look at origin, aroma, colour and how the matcha behaves in the cup.
Colour is a first signal, not the full verdict.
Place a little powder on white paper and rub it gently with your finger. Fresh matcha usually leaves a clearer green mark. A dull olive or yellow tone is a reason to check aroma, freshness and origin more closely.

Do not judge matcha by one signal alone. Origin, aroma, taste, milling and freshness belong together.
If you are choosing matcha for a menu, test it in the drink you actually serve. That shows how it works with your milk and workflow.
