Why do they pair well?

Ube is gently sweet, mellow and slightly earthy. Matcha is greener and pleasantly bitter when prepared well. Ube softens matcha; matcha keeps the drink from tasting too sweet.

The colour pairing works too

Purple and green are instantly recognisable. Prepare each base separately, use ice and pour matcha slowly at the end. Most importantly, the recipe should still taste good once mixed.

A simple starting point

  • 2 g of 100% Ube for the base.
  • Cold milk or plant-based drink.
  • 2 g of sifted matcha, whisked separately.
  • Moderate sweetness, adjusted after tasting.

For café service, record the weights, liquid volumes and build order so every barista can repeat it.

Does it contain caffeine?

Pure ube is naturally caffeine-free; matcha is not. The final amount depends on the matcha dose and the rest of the recipe, so it is worth telling customers clearly.
